Sure, one big aspect about a barbecue eatery is the slow-smoked meat. But also keep in mind those alluring sauces and sides. At UNITED BBQ, the vegan sandwich starts with a whole wheat roll, lettuce, and tomato, onto which are heaped seitan chunks that have been smoked and simmered in BBQ sauce (a hybrid Kansas City/Memphis recipe). Vegan diners have their choice of sides: coleslaw, pickles, homemade potato chips, pinto beans, brown rice with wheat berries, corn on the cob, French fries, or sweet potato fries. Seitan (sometimes called “wheat meat”) is also used in a vegan chili and a vegan tamale. United even offers vegan cheese to top the chili or a seitan-filled potato boat. For non-vegan diners, there’s a vast and incredibly tasty array of the usual suspects: pork or beef ribs, BBQ chicken, brisket, pulled pork or chicken, smoked wings, sausage, or turkey.
