Best Pond To Plate

Matunuck Oyster Bar

For the past few years, oyster and clam farmer Perry Raso has taken his pond products to farmers’ markets around the state. Last summer he went one step further and opened an eatery, the MATUNUCK OYSTER BAR, to showcase his harvests, as well as to offer other local oysters and seafood. Raso’s oysters show up in a sampler plate of a dozen raw oysters; in oysters Rockefel-lers (with Pernod, spinach, bacon, fresh herbs); in a fried oyster po’ boy sandwich, with tartar sauce and shredded Romaine; on a plate of fried oysters and French fries; in a stew of shucked oysters and cream; and, our supreme favorite: grilled, with a garlic herb butter. A similar highlight is the pan-roasted littlenecks with grilled chourizo in a garlic/white wine sauce. Local quahogs appear in stuffies and chowder; littlenecks in sauce over linguine; plus whole-belly fried clams.
