As in bacalhau, the Portuguese version of reconstituted dried and salted cod. There are traditional preparations in many countries, since the common fish holds up well when turned into a kind of fish jerky. While it’s popular from Sicily to Norway, no country relies on it more in their cuisine than Portugal. At ROSINHA’S, whose namesake Rosinha Almeida is from Cape Verde, you have your choice of two versions. The bacalhau codizo à Portuguesa ($17.95), is boiled and served with potatoes, chickpeas, cabbage, and hard-boiled eggs. Perfectly respectable. But there’s also bacalhau assado na Brasa ($16.95), which is grilled after being reconstituted. Marvelous. Eat hearty now, because cod fish stocks are in decline and may go the way of alewifes, which used to choke streams around here.
