Nicole Spaulding is a real French chef: French born-and-bred, she still spends a few months of the year at her home in Provence. Fortunately for Rhode Islanders, she has also set up her home kitchen to share her love of cooking and to demystify some classic French dishes through CHEZ NICOLE COOKING CLASSES. Class options are: quiches and soufflés, seafood, soups and desserts, everyday easy meals, and classic stews. In the latter, her beef bourguignon session took students through the prepping of the ingredients and the important browning of the meat. To accompany that dish, the class also made, under Spaulding's kind and patient tutelage: potato leek soup, roasted red peppers (from scratch), combined with goat cheese for salad; and pear clafoutis, like a fresh-fruit pudding, with drained yogurt and a raspberry coulis.
