Purple Pear of Providence Pecans

It’s not quite Peter Piper’s pickled peppers, but it’s close. The PURPLE PEAR OF PROVIDENCE PECANS gives that old saw some competition. These giant Georgia nuts are candy-coated by Margaret Lederer, who got a pecan recipe from a friend and experimented with it until she had two products to market: “buttery pecans” and “ginger pecans.” Both have a sugar-butter-egg-white coating that’s a bit crunchy before you get to the softer nutmeat of the pecan. The ginger pecans have a bit of a zing at the back of your mouth; they’re great for salads. The others can go from morning oatmeal to post-prandial ice cream. Gift packages have purple accents, in keeping with the company name. And Lederer’s motto says the rest: “Georgia grows great pecans; Providence makes them divine.”
