You’d think that it would be more like boudin, the Cajun sausage that you squeeze from its casing as you eat. But if your soupy reminds you at all of something in a bowl, you bought it at the wrong place. This traditional Italian sausage — known as soppressatta outside of southern Rhode Island — is as hard as salami and as distinctive as pepperoni. The most famous version is the soupy from Charlestown-based FORTUNA’S SAUSAGE CO., thanks to Jay Leno loving their Sausage of the Month Club and promoting it on his show. It’s hot from black pepper more than its red pepper, and while a hint of the usual fennel seed comes through, there’s a subtle combination of spices that makes it different. It’s “wonderfully flavorful without being overpowering,” as Gourmet Digest put it.
