Best Best Culinary Fair Fight

In North Carolina they lightly vinegar their ribs and pulled pork and consider sauce to be an adulterant like ketchup. In saucy Kansas City, they beg to differ. Under the auspices of the New England Barbecue Society, the RI State BBQ Championship will be held May 20 and 21 at Warwick Mall, on the the Filene’s side of the courtyard. It’s Kansas City-style. Grilling is on Saturday, and the “low and slow” wood and charcoal technique is the mode on Sunday. Twenty teams will compete in the latter, only one from a restaurant. The others are “guys and gals who think they’re really good at it and put their [entrance fee] money where their mouth is.” So says Ray Depot, a culinary arts instructor on the Anchor Men team, five friends who have placed second in the past. For the resulting appetites whipped up, BBQ vendors will be on hand. Tickets are $5. www.nebs.org
