Achieve brew bliss!

Kvasir- the ingredients used in this unique brew: wheat, lingonberries, cranberries, myrica gale, yarrow, honey and birch syrup. The base of Kvasir is a toasty red winter wheat, and the bog-grown berries deliver a pungent tartness.  ABV 10%

Bitches Brew- a dark beer that's a fusion of three threads of imperial stout and one thread of honey beer with gesho root. It's a gustatory analog to Miles' masterpiece and it clocks in at 9 % ABV

120 Minute IPA- Clocking in at 15-20% ABV and 120 IBUs, it's easy to see why we call this beer THE HOLY GRAIL for hopheads! Boiled for a full two hours while being continuously hopped with high-alpha American hops, then dry-hopped daily in the fermenter for a month and aged for another month on whole-leaf hops.

Fort (2011) - An ale brewed with a ridiculous amount of raspberry juice. Fort has a Belgian-style base, then we follow a similar fermentation process to the one we use on beers like 120 Minute IPA and World Wide Stout.  18% abv

Saison Du Buff - This beer is collaboration between Dogfish Head, Stone Brewing Co. and Victory Brewing Company. Saison du BUFF is a 6.8% ABV Saison brewed with parsley, sage, rosemary and thyme.

Burton Baton (through a Randall with whole cone Citra Hops) - For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA. After fermenting the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month. Tonight we pour it through our own Randall device filled with whole cone Citra hops to bring out the strong citrus notes in this legendary 10% IPA


Agrestic single barrel #16 - American Wild Red Ale - Draft only release, extremely limited.

Agrestic 16 is a 100% single barrel American Oak-aged version of Agrestic.  A rustic red ale that is fermented in the Firestone Union then aged and inoculated with B. Lambicus and lactobacillus in an American Oak barrel for 14 months.  It is here where it develops its earthy funk, quenching acidity and complex flavor.

Parabola - barrel aged Russian imperial stout.  Bold Bourbon, tobacco and espresso aromas and a hint of American oak greet the nose.  Rich, chewy roasted malts, charred oak and bourbon-like vanilla attack the palate and finish with a bang. 13% abv, 82 ibu

Sucaba - barrel aged barley wine.  Big boozy bourbon and American oak aromas combined with soft chocolate malty undertones. Complex malt flavors framed in oak, with hints of dark chocolate, vanilla, tobacco, coconut and just a touch of dark cherry. 13% abv, 42 ibu

Opal Farmhouse Ale - Dry Hopped Saison 7.5% abv a harmonious blend of rustic grains, spicy yeast and unique sauvignon blanc tones. Inviting lemon grass and gooseberry meet peppery spice and fresh grain aromas.


Chocolate Drew – A local IPA collaboration with Drew Shotts of Garrison Chocolates (no relation to Nick!). Raw cocoa was added to the mash, and then the beer was "dry chocolated" with cocoa nibs.

Joaktoberfest – Foolproof's Augtoberfest festbier aged in a Sons of Liberty single-malt whiskey barrel. Vanilla and oak notes complement the Munich malts in this delicious fall ale.

Queen of the Yahd – Queen is the latest entry in Foolproof's lineup of royal IPAs. This IPA is aged on fresh raspberries and dry-hopped with homegrown Cascades from Stefano's own "backyahd" in Cranston. That's as local as it gets!

Rain Stick – Raincloud Robust Porter aged on oak spirals. Welcome the triumphant return of Foolproof's most popular beer from last year's Beervana!

BigS –  This English-style strong ale was inspired by a recent visit from a fellow brewer in the UK. "BigS" is the first runnings of a parti-gyle batch brewed by Steve Sharp, Foolproof's lead brewer and resident strong man. This strong ale is brewed by a strong man.


KBS (Kentucky Breakfast Stout) - is an imperial stout brewed with massive amounts of coffee and chocolates.  We then cave age this beer in oak bourbon barrels for an entire year to make sure the wonderful bourbon undertones come through in the finish.  11.2% ABV, 70 IBUs

Dissenter India Pale Lager 2014  Brewed with a wide variety of tropical, citrus-forward hops, Dissenter clocks in at 8.7% ABV and 70 IBUs. Our ales are fermented at warm temperatures, but this lager is fermented cold, using a different kind of yeast. The longer brewing process used for lagers gives Dissenter an exceptionally clean finish, allowing you to appreciate the clear beauty of the hops as you would a well thought out, eloquent dissenting opinion.

Imperial Stout - This stout is brewed with 10 varieties of malted barley which leads to a smooth as silk, yet complex and rich in body brew. 10.5% ABV 90 IBUs
2012 Old Curmudgeon
– This Old Ale is brewed with molasses and has an insane focus on the malt bill, then oak aged.   The result is a strong, rich, malty delight that’s deceptively smooth and drinkable. 9.8% abv, 50 IBUs

Bourbon CountyStout - This barrel aged Imperial Stout is a liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke. One sip has more flavor than your average case of beer. A gigantic beer that’s perfect when enjoyed on its own or with a fine robust cigar. 14.5% abv

Bourbon County Barleywine - Aged in the third-use barrels that were once home to Kentucky bourbon and then our renowned Bourbon County Stout, this traditional English-style barleywine possesses the subtlety of flavor that only comes from a barrel that’s gone through many seasons of ritual care. The intricacies of the previous barrel denizens – oak, charcoal, hints of tobacco and vanilla, and that signature bourbon heat – are all present in this beer. 12.1% abv
Bourbon County Coffee - Everyday Goose Island smells the wonderful coffee roasting next to our brewery at Chicago's Intelligentsia Coffee and Tea. This world class roaster puts the same passion and skill into their coffee as Goose Island does with its beer. This excellent stout is made with a different coffee from our friends next door each year. With the change in coffee comes a change in the flavor profile, making each release truly unique from the previous years. 13.4%
Sofie Paradisi - Our original Sofie is aged in wine barrels with orange peel and fermented with the wild Belgian yeast Brettanomyces. Inspired by the traditions of farmhouse ales, we decided to create a new variant using a different, yet similar fruit – grapefruit. This variant is also aged in wine barrels but features a different blend. The change in fruit offers a brighter citrus nose and a distinctly tart finish along with the slight bittersweet characteristics common to grapefruit. 6.7%
Lolita - Lolita is a pink rose colored Belgian Style pale ale fermented with wild yeast and aged on raspberries in wine barrels. Aromas of fresh raspberries, bright jammy fruit flavors and effervescent body make Lolita an ideal beer to suggest to beer drinkers fond of Belgian Framboise. 9% abv
The Muddy - Brewed with molasses, brewer’s licorice, and Belgian dark rock candi sugar, The Muddy is an imperial stout with amplified sweetness for a taste as distinctive as the Chicago blues that inspired its creation. 9.0%
