There is an interesting story behind many of the recipes at Angkor Restaurant. Chef Bopha Kem’s aunt was a personal chef for the sister of the queen of Cambodia, working in the kitchens of the Cambodian royal palace. Kem wrote down the recipes, which had been transmitted orally before that, escaping with the culinary valuables when her family fled the civil war in the late ’70s, and Kem settled in Providence.
